An Apple is a super fruit. It is good for depression, stress, and it helps to combat chronic disease. It contains soluble fiber, pectin, and insoluble fiber, vitamins A, and C, folate, calcium, phosphorus, iron and potassium as a healthy salt. Prescriptive Apple Pie a la mode has no saturated fats and is less than half the calories of a traditional piece of apple pie with ice cream. This recipe makes about 4 individual pie-tarts.
Ingredients
- 1 Large apple
- ½ cup of water
- 1 Tbs lemon juice,
- 1 tsp lemon and 1 tsp ginger zest
- 2 TBS cinnamon
- 2 TBS raw cane
- ½ Cup raisins
- ¼ Cup buckwheat flour
- 1 TBS of cinnamon
- 1/8 Cup to ¼ Cup of a prune-based, fat-free, butter and oil replacement
- ½ tsp sodium salt
- ½ tsp baking powder
- Ice water
- Fat free frozen yogurt
- Toasted almonds
The Filling
- Preheat oven to 325-350 degrees F.
- Core and thinly slice one large apple, your choice, I like honey crisp.
- Add ½ cup of water, lemon juice, lemon and ginger zest
- Add 2 TBS cinnamon and 2 TBS raw cane sugar or non-caloric sweetener.
- Cook in microwave for 7-10 min depending on power of your microwave.
- After cooking add ½ cup raisins, stir and set aside.
The Piecrust:
This is tricky. You want a flaky crust that is not tight and since we will not be using saturated fats or refined grain flour, one must be creative.
- ¼ C buckwheat flour. (You can make your own by putting the whole grain of your choice in a food processor. Then sift it afterwards to get as close to a fine grain as possible.)
- Add 1 TBS of cinnamon to give it that light brown color found when using saturated fats.
- 1/8 C to ¼ C of a prune-based, fat-free, butter and oil replacement.
- ½ tsp sodium salt
- ½ tsp baking powder
- Mix adding ice water as needed until a moist dough ball is formed.
- Coat a small pie tin with a non-caloric butter spray.
- Bake in oven for 30-35 min or until the crust is brown around the edges.
- Take out and cool for 30 min to an hour. During that time the crust will harden.
- Then add apple mixture, top with fat-free frozen yogurt and toasted almonds.
- Use butter spray and toast almonds in non-stick fry pan.
